This sake brewery was founded in 1910 deep in the mountains of Saiki City, Oita Prefecture. With the shochu boom, they focused on producing barley shochu and suspended sake brewing for a while, but resumed sake production in 2011 due to strong requests from local Saiki residents. The brewery is committed to local production, brewing only junmai sake using all locally grown rice. The brand "Saiki Hisho" was named by local residents who were eager to resume sake brewing, with the intention of "bringing Saiki sake to the world!" Using locally grown sake rice including Yamadanishiki, the brewery produces junmai daiginjo, junmai ginjo, and junmai sake, each with its own unique flavor and taste.
