This sake brewery was founded in 1910 deep in the mountains of Saiki City, Oita Prefecture. With the shochu boom, they focused on producing barley shochu and suspended sake brewing for a while, but in 2011, they resumed sake production due to strong requests from local residents of Saiki City. They are committed to using locally grown rice and brew only pure rice sake. The brand name "Saiki Hisho" was named by local residents who were eager to resume sake brewing, with the intention of "bringing Saiki sake to the world!" By brewing using locally grown sake rice such as Yamada Nishiki, you can enjoy the different flavors and tastes of each of their sakes, such as Junmai Daiginjo, Junmai Ginjo, and Junmai.
