This sake brewery was founded in 1910 in the mountains of Saiki City, Oita Prefecture. Due to the shochu boom, they mainly produced barley shochu and temporarily suspended sake production. However, in response to strong demand from local residents of Saiki City, they resumed sake production in 2011. This brewery is committed to using local ingredients, brewing only junmai sake using 100% locally grown rice. The brand name "Saiki Hisho" was chosen by local residents who eagerly awaited the resumption of sake production, expressing their desire to "bring Saiki's sake to the world!" By using locally grown sake rice, including Yamada Nishiki, they offer a variety of sakes, including junmai daiginjo, junmai ginjo, and junmai, each with its own distinct flavor and taste.
