Founded in 1923, this sake brewery is based in Yonezawa, the castle town of the Uesugi clan, and is committed to traditional sake brewing methods using the cold brewing process, taking advantage of the snowy region of Yonezawa. All of the brewing processes are carried out by hand, from washing the rice with their bare hands to labeling the sake. "Koubai" is a refreshing sake with a clean taste that reminds one of plum blossoms that bloom with a refreshing fragrance in spring, and is a masterpiece that can only be brewed in the snowy region of Yonezawa.
