Founded in 1923, this sake brewery is based in Yonezawa, the castle town of the Uesugi clan. Taking advantage of the snowy terrain of Yonezawa, the brewery is committed to traditional sake brewing methods using cold brewing methods, with artisans painstakingly carrying out every step of the brewing process by hand, from washing the rice with their bare hands to labeling the sake. Dreaming of the warmth of spring amid the harsh winter, they patiently wait for the snow to melt, and in spring, their refreshingly fragrant plum blossoms bloom. Their clean, refreshing sake, "Koubai," is a masterpiece that could only be brewed in the snowy countryside of Yonezawa.
