Founded in 1923, this sake brewery is a local sake of Yonezawa, the castle town of the Uesugi clan. Taking advantage of the unique geography of snowy Yonezawa, they adhere to traditional sake brewing methods, from washing the rice by hand to attaching the labels, with every step of the brewing process meticulously done by hand by skilled artisans. "Koubai," a sake with a clean and refreshing taste reminiscent of plum blossoms that bloom with a refreshing fragrance in the spring after patiently waiting for the warmth of spring amidst the harsh winter, is a masterpiece that can only be brewed in snowy Yonezawa.
