Founded in Arima during the mid-Edo period, the brewery relocated to Mikage-go, one of the five Nada sake-producing regions, during the time of the third generation. The brewery was destroyed in the Great Hanshin-Awaji Earthquake of 1995, and production was suspended, but brewing resumed 12 years later in 2007. At that time, a new brand was created bearing the name "Sensuke," which had been passed down through generations of the family. The brewing water is groundwater from Mt. Ichio in the Rokko Mountains, and the rice used is carefully brewed using 100% Hyogo Prefecture rice, including Yamada Nishiki. In addition to Junmai Daiginjo and Daiginjo, a variety of sakes with different tastes and flavors are offered depending on the season, including special brews and unfiltered unpasteurized sake. The brewery won an Excellence Award in the "Ginjo Sake Category" at the 2023 Osaka Regional Taxation Bureau Sake Appraisal Competition.
