Founded in 1832 (Tenpo 3), this brewery has cultivated sake-making techniques that have been cherished for generations, resulting in a long-loved flagship brand. Its name originates from the sight of the pure white snow piled on the summit of Mt. Yuragatake, also known as Tango Fuji, which towers in front of the brewery, and the ninth-generation owner, Rokuemon, wrote the poem "Hakurei" (White Peak). In 1950 (Showa 25), the names of the famous sakes "Chiyo Hakuhou" and "Yuraizumi" were changed to "Hakurei." They are particular about everything from cultivating the sake rice, and for brewing water, they use spring water from Fudo Falls, which flows down the middle of Mt. Yuragatake. Despite being extremely soft water, they can brew both sweet and dry sake, and it is said to have an exceptionally smooth finish. It pairs perfectly with the bounty of the Sea of Japan that Kyoto Tango is proud of, such as snow crab, cockle, and sandfish.
