This long-loved flagship brand boasts brewing techniques cultivated since the brewery's founding in 1832 (Tenpo 3). The name comes from the poem "Hakurei" (White Mountains) that the ninth generation Rokuemon wrote about the pure white snow-covered peaks of Mount Yuragadake, part of Tango Fuji, towering before the brewery. In 1950 (Showa 25), the names of the famous sakes "Chiyo Hakuho" and "Yuraizumi" were changed to "Hakurei." The brewery is meticulous in the cultivation of its sake rice, and uses Fudosansui (Fudo Sansui), a spring water from the Fudo Falls that flows midway up Mount Yuragadake, for its brewing water. Despite the water quality being extremely soft, it can brew both sweet and dry sakes, and is said to have a remarkable sobering effect. It pairs perfectly with seafood from the Sea of Japan, a specialty of Kyoto Tango, such as Matsuba crab, cockle, and sandfish.
