"Kurato" is the most Biwacho-esque sake from Biwacho, known for its "longevity of the Biwa." A rice sake must fully bring out the umami of the rice. This Junmai Ginjo was created with that concept in mind. It has a full-bodied flavor and plenty of umami, but also has a sourness similar to Biwacho's signature wine, which finishes off with a crisp finish. Customers often ask, "Is it sweet or dry?" To which the owner explains, "Umakuchi" (delicious flavor) lies somewhere between "sweet" and "dry." This sake truly is utterly "umakuchi."
