"Kurabito," the most representative sake of Biwacho, the rice variety known as "Biwacho's Longevity." As a rice sake, it must fully bring out the deliciousness of the rice. This Junmai Ginjo was brewed with that concept in mind. It has a full-bodied flavor with plenty of umami, but it also has Biwacho's signature wine-like acidity, which gives the aftertaste a crisp finish! It's a sake with a clean taste. Customers often ask, "Is it sweet or dry?" and the brewers explain that it's neither sweet nor dry, but rather has a flavor that is "umami-rich." This sake is truly "umami-rich."
