"Kurato" is the most Biwacho-esque sake from "Biwacho", also known as "longevity of the Biwa". For sake to be made from rice, the umami of the rice must be fully brought out. This Junmai Ginjo sake was made with that concept in mind. It has a full-bodied taste and plenty of umami, but also has an acidity similar to Biwacho's specialty wine, which gives it a crisp aftertaste! It's a sake with that kind of flavor. Customers often ask, "Is it sweet or dry?" and they explain that the taste is neither "sweet" nor "dry", and that it has a "umami" flavor. This sake is truly "umami".
