Fukunishiki was founded in the Tenpo era (1839) in Harima Province. It is a sake brewery that is particular about brewing only pure rice sake using all locally grown rice. Their representative brand, Fukunishiki, was named after the auspicious "Fuku" (luck) and "Nishiki" (nishiki) which represents the magnificent autumn leaves of Hokke-san Ichijo-ji Temple, where the brewery is located. Using locally grown sake rice, primarily Yamada-nishiki, Fukunishiki is available in a variety of varieties, including pure rice daiginjo, pure rice ginjo, and pure rice, each with its own unique flavor and taste. In 2014, they also launched a brand called Junsei, which is brewed with an unconventional attitude. Following the teachings of their predecessors, they make sake that makes the most of the natural flavor of the rice.
