Fukunishiki, founded in 1839 in Harima Province, is a sake brewery dedicated to producing only junmai sake using 100% locally grown rice. Its flagship brand, Fukunishiki, is named after the auspicious "Fuku" (fortune) and "Nishiki" (brocade), which represents the magnificent autumn leaves of Hokkesan Ichijoji Temple where the brewery is located. Using locally grown sake rice, primarily Yamada Nishiki, Fukunishiki offers a variety of sakes, including junmai daiginjo, junmai ginjo, and junmai, each with its own distinct flavor and taste. Since 2014, they have also launched "Junsei," a brand brewed with an unconventional approach. While respecting the teachings of their predecessors, they continue to produce sake that fully utilizes the inherent flavor of the rice.
