Fukunishiki was founded in the Tenpo era (1839) in Harima Province. It is a dedicated sake brewery that uses only locally grown rice and brews only pure rice sake. Their flagship brand, Fukunishiki, is named after the auspicious "happiness" (fuku) and the "nishiki" (nishiki), which represents the magnificent autumn leaves of Ichijoji Temple on Mount Hokke, where the brewery is located. Using locally grown sake rice, primarily Yamadanishiki, Fukunishiki offers a variety of flavors and umami, including junmai daiginjo, junmai ginjo, and junmai. In 2014, they launched Junsei, a brand brewed with an unconventional approach. While adhering to the teachings of their predecessors, they create sake that truly brings out the natural flavor of the rice.
