This sake name has been beloved even before it was adopted as the brewery's name. "Shotoku" comes from the Zen phrase "Fuku yitoku kan," meaning "good fortune invites with virtue (happiness is invited with a good heart)." The lineup includes Junmai sake with a gentle aroma and soft flavor, centered around Junmai Daiginjo, which boasts a gorgeous aroma and delicate flavor. It pairs well with Kyoto cuisine, enhancing the flavor of meals. The harmony of rice flavor and acidity is exquisite, and the sake can be enjoyed hot or cold. The sake is made using traditional techniques, carefully cultivating natural lactic acid bacteria found in the brewery, and includes Junmai Daiginjo and unfiltered unpasteurized sake, seasonal limited editions, and ice cream flavored with the aroma of "Shotoku" sake lees. *Available from Friday, March 15th.
