This sake brand has been loved since before it was officially adopted as the brewery's name. "Shōtoku" is derived from the Zen phrase "Fuku yitoku shō," meaning "Fortune is invited by virtue (happiness is invited by a good heart)." The brewery mainly offers Junmai Daiginjo, which boasts a gorgeous aroma and delicate flavor, as well as Junmai sake with a gentle fragrance and soft flavor. It pairs well with Kyoto cuisine and is also a sake that enhances the flavor of meals. The harmony of the rice's umami and acidity is superb, and it can be enjoyed both warm and chilled. In addition to Junmai Daiginjo and unfiltered unpasteurized sake brewed using the traditional Kimoto method, which involves carefully cultivating naturally occurring lactic acid bacteria in the brewery over time, there are also seasonal limited-edition products and ice cream flavored with Shōtoku sake lees. *Sales begin on March 15th (Friday).
