Naminone Sake Brewery is a small sake brewery located on the shores of Lake Biwa, founded over 200 years ago. With the philosophy of "Kokoshinshu" (new sake in an old jar) that preserves tradition while trying new things, the 10th-generation brewer, Takashi Nakai, and his three younger brothers, work on carefully brewing sake in small batches, and their yearly evolution has attracted attention. Naminone is a sake renowned for its elegant sweetness and umami, using techniques inherited from Noto Toji, Kanai Taiichi.
