Nestled on the shores of Lake Biwa is a small sake brewery with a history of over 200 years: Naminone Sake Brewery. Embracing the philosophy of "Kokoshinshu" (old jar, new sake), which combines tradition with innovation, the 10th generation brewery owner, Takashi Nakai, and his two brothers are dedicated to meticulous small-batch brewing, and their yearly evolution is attracting attention. Naminone sake is renowned for its elegant sweetness and umami, inherited from Noto Toji (master brewer) Taiichi Kanai.
