They trust in the work of bacteria, waiting for and encouraging fermentation. This is the "completely additive-free, raw moto" sake that is the true essence of Tsuchida Sake Brewery. Completely additive-free brewing means that the sake is made using only three ingredients: rice, water, and koji. Not only are no brewers' alcohol, sugars, or acidulants used, but also no fermentation aids such as lactic acid or enzymes, which are not required to be displayed on the label. And no yeast is added. This sake is produced by the yeast and lactic acid bacteria that live in the brewery.
