They trust in the action of bacteria, wait for fermentation, and encourage it. This is a sake made with "completely no additives, made from raw ingredients," which could be said to be the true essence of Tsuchida Sake Brewery. Completely additive-free brewing means that the sake is made with only three ingredients: rice, water, and koji. Not only are they using no brewing alcohol, sugar, or acidulants, they are also not required to display any fermentation aids, such as lactic acid or enzymes. And they don't add any yeast. The yeast and lactic acid bacteria that live in the brewery are what create this sake.
