Founded in the mid-to-late Edo period in Higashiomi City, on the eastern side of Lake Biwa. In 2000, they suspended sake brewing at their own brewery. Afterwards, they rented a brewery from Hata Sake Brewery in the same city and launched the Ichihiro brand, and in 2015 they resumed sake brewing at their own brewery. The brand name "Ichihiro" was derived from one character each from the names of two Noto sake brewers whom master brewer Kazuhiro Nakazawa studied under, Takaichi Sakato and Hiroshi Taniuchi. They use only sake rice (Yamada Nishiki and Ginbuki) produced by local contract farmers, the Donbyakusho Association, and produce only junmai sake.
