The name of their flagship sake, "Rairaku," comes from a line in the Analects of Confucius, a Chinese philosopher, that reads, "A friend comes from afar, is it not a joy?" While there are various interpretations of this phrase, it is said to mean "the greatest pleasure in life is sharing a drink and chatting with friends," and was chosen as a sake suitable for a drinking party. The sake is made using techniques handed down for 170 years, using sake rice and famous water grown in Hyogo Prefecture, primarily Yamadanishiki, a rice variety suited to sake brewing, as well as Gohyakumangoku and Hyogo Kitanishiki. From light and refreshing Daiginjo to Junmai Ginjo, which allows you to fully experience the umami of the rice, the sake ranges in a wide variety of flavors, all of which are rare and valuable precisely because they cannot be mass-produced. All of these sakes are renowned for pairing well with local Akashi seafood.
