This is a sake that, in truth, shouldn't exist in this world. The brewing of Fushimino sake began with reviving an extinct rice variety. The name of that rice is "Iwai." It's a variety that's known as a "farmer's nightmare" because its stalks are long and prone to falling over, and it produces a small yield, and it has gone extinct twice in the past. On the other hand, its grains are large, and it has a high proportion of white core, making it an ideal variety for making delicious sake. We insisted on using this troublesome local Kyoto rice. The revived "Iwai" is carefully brewed with the water of Fushimi and by the hands of the people of Fushimi, and it became Fushimino. This sake would never have been born into this world without the passion to make Kyoto sake in Kyoto, and without the tenacity to revive the extinct "Iwai." A celebratory sake for milestones in life.
