This variety has been extinct twice in the past because the rice is prone to falling over and produces small amounts of fruit, which is said to make farmers cry. On the other hand, the grains are large and have a high proportion of white-core rice, making it the perfect variety for making delicious sake. We were particular about using rice from our local Kyoto, which requires a lot of care. The revived "Iwai" was carefully brewed with water from Fushimi and by the hands of the people of Fushimi, and became Fushimino. Without the passion to make Kyoto sake in Kyoto, without the tenacity to revive the extinct "Iwai", this sake would not have been born into this world.
