This is a sake that shouldn't exist in this world. Fushimino's sake brewing began with the revival of an extinct rice variety. The name of that rice is "Iwai." This variety was said to be "a burden to farmers" due to its long, prone to falling over and low yields, and was extinct twice in the past. However, its grains are large and have a high proportion of white-core rice, making it the perfect variety for making delicious sake. We chose to use rice from our local Kyoto region, which requires a lot of care. The revived "Iwai" was carefully brewed with Fushimi water and by the hands of Fushimi people, and became Fushimino. Without the passion to make Kyoto sake in Kyoto, without the determination to revive the extinct "Iwai," this sake would never have been born. A celebratory sake for a milestone in one's life.
