In fact, this is a sake that should not exist in this world. Fushimino's sake brewing began with the revival of an extinct rice. The name of that rice is "Iwai". This variety has been extinct twice in the past because the rice is long and prone to falling over, and the yield is small, which is said to be "a pain for farmers". On the other hand, the grains are large and have a high proportion of white-core rice, making it the perfect variety for making delicious sake. We were particular about using rice from our local Kyoto, which requires a lot of care. The revived "Iwai" was carefully brewed with water from Fushimi and by the hands of the people of Fushimi, and became Fushimino. Without the passion to make Kyoto sake in Kyoto, without the tenacity to revive the extinct "Iwai", this sake would not have been born in this world. A sake to celebrate the turning points of people's lives. Please enjoy it.
