Founded in 1892 (Meiji 25) as "Takeshima Honke" in Minakuchi-juku on the old Tokaido road, Eishiki Sake Brewery was named "Eishiki" by the second generation owner, reflecting their ambition to brew fine sake that brings a smile to your face when you taste it. Under the fifth generation owner and head brewer, Takeshima Masahiko, they have been making sake using only pure rice brewing methods, without adding brewing alcohol or lactic acid, and focusing on sake with a clean sweetness. They became widely known for their "Kijoshu Monsoon." Using contract-farmed rice from Shiga Prefecture, and utilizing both their own well with groundwater from the Suzuka Mountains and ultra-soft water from the deep rocks of Mt. Iwama, they continue to produce local sake unique to Omi.
