Warashiki Sake Brewery was founded in 1892 (Meiji 25) as "Takeshima Honke" in Mizuguchi-juku on the old Tokaido road. The second generation owner named it "Waraishiki" to express their enthusiasm for brewing delicious sake that will make you smile when you taste it. Under the direction of the fifth generation brewer and brewing manager, Takeshima Masahiko, the brewery has been making sake with pure rice fermentation, kimoto fermentation without adding brewing alcohol or lactic acid, and focusing on sake with a clean sweetness, and the brewery's name became known for its "Kijoshu Monsoon". They continue to make local sake unique to Omi by using rice grown under contract in Shiga Prefecture and ultra-soft water from their own well with underground water from the Suzuka Mountains and the deep rock water from Iwamayama.
