"Horse plowing" is a method where people and horses work together to cultivate fields and bring out the inherent power of the soil. Tanjinba is a sake made from Gohyakumangoku rice, grown using horse plowing and organic farming methods, nurtured in harmony with the fields, people, and horses. Just as people have offered votive tablets to shrines with white horses for praying for a bountiful harvest and black horses for praying for rain, Tanjinba also comes in two distinct types: white and black. The "white" is a junmai sake made by Tsunan Jozo, a local sake brewery in Tsunan town where the fields are located, using their polishing techniques to express both delicacy and strength. The "black" is a junmai sake made using the kimoto method by Shotoku Shuzo, a sake brewery in Fushimi, Kyoto, which boasts a history of 1645. Enjoy the harmonious blend of flavors with ingredients nurtured by the bounty of the land, game meat, and local cuisine.
