This sake was born from a reconstruction project in Cabo Delgado Province, northern Mozambique, East Africa. As part of efforts to rebuild the lives of local farmers, locally grown rice was purchased with the cooperation of a local corporation and crossed with Japanese horse-farmed koshihikari rice for brewing. The local rice is a native variety called Mukojo, a type of non-glutinous rice. The koji is brewed using precious domestic horse-farmed koshihikari rice, carefully grown without fertilizer or pesticides, using the power of both humans and horses. As the name suggests, this sake is born from the encounter and fusion of the cultures of two countries, named after Yasuke, a Mozambican samurai who served Oda Nobunaga, and the first foreign samurai in Japanese history. Kyoto's Shotoku Sake Brewery produced a limited edition of 500 bottles using the traditional kimoto brewing method. It will be available from spring 2023.
