Founded in 1884 (Meiji 17), Hatsusakura was named with the hope that it would be loved by everyone. They use rice from contracted farmers in Shiga Prefecture and local rice from Tsuchiyama, Koka City, as well as soft well water that bubbles up from the center of the brewery. They are particular about pressing the sake using a now rare Sase-style wooden vat. The sixth generation owner, who returned from his training, started brewing kimoto sake in 2019 and launched the new "New Hatsusakura" brand. The catchphrase displayed on the label is "Delicious sake that will bring a smile to your face."
