

Hatsuzakura [Yasui Sake Brewery]

Founded in 1884, "Hatsuzakura" was named with the hope that it would be loved by everyone. It uses rice from Shiga Prefecture grown by contracted farmers, rice from Tsuchiyama in Koka City, and soft well water that gushes forth from the center of the brewery. A point of pride is that it is pressed using the now rare Sase-style wooden press. The sixth generation owner, who returned from his apprenticeship, started the kimoto method in 2019 and launched the new "New Hatsuzakura" brand. The catchphrase displayed on the label is "Delicious sake that brings a smile to your face."
