As a sake brewery committed to protecting rice paddies, the Odayaka brand supports local organic farmers by using their rice. When this initiative gains recognition from customers, expands, and leads to increased purchases, we can take on various challenges toward obtaining certification as a "regenerative organic farming" (*1), which promotes the healthy regeneration of soil and the surrounding environment. The brewing water used is spring water (soft water) from our own mountain. The result is a soft and gentle flavor, befitting the name Odayaka (meaning "calm" or "gentle").
