Sake selected and brewed by nature. Everyone feels and faces nature differently. This sake is brewed with the idea that if you can find the inevitability that arises from the choices that occur every day, you can make choices that are not impossible. That is why, in order to express the inspiration of Yoshino that I feel on a deep level right now, I have created "Natural Selection", a sake brewed effortlessly with the nature of Yoshino as its motif. Fermentation adapted to Yoshino, which has the power to continue to live, not by defeating nature but by staying close to it. From the perspective of "Hana Tomoe: the value of acidity" and "Centured Cedar: a concentration that is close to nature", I aim to brew sake that can tenaciously survive and continue to be brewed in the Yoshino region, as a natural taste born from effortless brewing, and to create "deliciousness" that does not impose values.
