Kitajima Sake Brewery, located in Kosai, Konan City, Shiga Prefecture, was founded in 1805 and has been dedicated to sake. Although production was temporarily suspended during World War II, they have been brewing sake using rice and water from Omi for over 200 years. By using mellow, soft underground water from the Suzuka Mountains in the brewing process, they are able to bring out a clear, gentle flavor. Based on traditional brewing methods born from the crystallization of the wisdom of our ancestors and the climate, they will continue to pursue and disseminate the delicate flavors that only sake can have, the delicious chemical reactions with food, and the way sake should be in line with the times. They don't just preserve tradition, they evolve it. Together with you, we will create a new world of sake.
