Kitajima Sake Brewery, located in Kosai, Konan City, Shiga Prefecture, was founded in 1805 and has been dedicated to sake. Although production was temporarily suspended during World War II, they have been brewing sake using rice and water from Omi for over 200 years. By using the mellow, soft underground water of the Suzuka Mountains in the brewing process, they are able to bring out a clear, gentle flavor. Based on traditional brewing techniques born from the crystallization of the wisdom of our ancestors and the natural environment, they will continue to pursue and promote the delicate flavor that is unique to sake, the delicious chemical reaction with food, and the ideal form of sake that is in line with the times. They not only preserve tradition, but also evolve it. Join us in exploring the new world of sake.
