Located in Kosei, Konan City, Shiga Prefecture, Kitajima Brewery has dedicated itself solely to sake production since its founding in 1805. Although production was temporarily interrupted during World War II, it has continued to brew sake using rice and water from Omi for over 200 years. By using the mellow, soft groundwater from the Suzukayama mountain range in its brewing process, it brings out a clear and gentle flavor. Based on the wisdom of its predecessors and traditional brewing methods born from the local climate, the brewery continues to pursue and promote the delicate flavors unique to sake, its delicious synergy with food, and the way sake should be in line with the times. Not only does it preserve tradition, but it also evolves it. A new world of sake awaits you.
