Yosa Musume Brewery has been operating in this location since 1887. Since its founding, it has used pure water naturally filtered through granite from a horizontal well that connects to the center of the hill behind the brewery as its brewing water. Furthermore, the wooden brewery, which has been in operation since the Edo period, maintains optimal conditions in terms of temperature and humidity, supporting sake brewing in northern Kyoto, where the climate changes greatly. Sake brewing has always been carried out primarily by family members. To ensure that the essence of the brewed sake is not overlooked, the brewery and the residence are connected, and the brewing style has remained unchanged since ancient times.
