Founded in 1675, this brewery boasts a long history in Fushimi and is the originator of "nigori-zake" (unfiltered sake) and "koshu" (aged sake). Located on the Toba brewing road, it once served as a lodging place for court nobles traveling from Kyoto to western Japan. The name "Tsuki no Katsura" (Moon's Katsura) was given by a court noble named Anekōji Arinaga, who composed the poem, "May the clear moonlit waters of Katsura River be drawn night after night, and may we prosper for generations to come." Praised by many writers and artists, it is also known as "the sake of literati." Above all, this brewery has nurtured the "seasonality" and "individuality" of its sake.
