The snow and rain that fall on Mauna Kea Mountain, a sacred Hawaiian site on the Big Island, are filtered through volcanic rock, becoming soft and pure water. This water is reborn as sake in Hapuna (meaning "place where life-giving water springs forth" in Hawaiian), where our brewery is located. The refreshing winds blowing down from the 4,000-meter-high mountain?higher than Mount Fuji?carry the scent of plumeria to our brewery. We use this wind to cool the rice before putting it into the tank. We craft the world's most soothing sake amidst Hawaii's magnificent nature. Using Hokkaido's sake rice "Kitashizuku," you can discover a deep rice flavor within the tropical Hawaiian aromas.
