Crafted entirely with Hidahomare, a locally grown sake rice from Mizunami City, cultivated using sustainable methods that reduce CO2 emissions and employ original organic fertilizers developed collaboratively by farmers and the brewery. This sake is a reflection of the region’s unique terroir and natural beauty. It offers a crisp, clean taste, making it enjoyable both chilled and warmed. Pairs excellently with seafood.

Story
Kozaemon [Nakajima Brewery]
Founded over 320 years ago, the brewery began brewing sake in the Genroku period (1702), when Edo culture was at its most flourishing. The town was named Mizunami after the beautiful rippling waves of the Mizuho River, which was created by flood control and reclamation of the Toki River basin, which meanders through the town. The brewery is located in the eastern Mino area of Gifu Prefecture, where ceramics and forestry are thriving, and the soil is about 20 million years old. The brewery is loved by people all over the world for its sake brewing, which makes use of the soft water nurtured by the rich nature.
