Assemblage Club
"Assemblage Club" is a Japanese sake developed and produced by Leaf Publications Co., Ltd. and three sake breweries in Kyoto, using the assemblage technique. Assemblage refers to the traditional technique of blending base wines, and is the mainstream method in France, Italy, and Spain. Bordeaux wines and Champagnes remain representative of the world, both now and in the past, because of the complex flavors and aromas that can only be created through this blending process. It has become clear that in Japanese sake, too, there are flavors that can only be achieved through assemblage, such as layering flavors or smoothing out the edges. In addition to the fermentation techniques of the toji (master brewer), the technique of assemblage can further expand the range of flavors in Japanese sake. A miraculous blend that transcends sake breweries. Please enjoy the world of assemblage. It won the Silver Award in the tasting judging of the "Milan Sake Challenge 2024".
