Junmai Daiginjo MIYASHITA ESTATE is a Junmai Daiginjo sake made with Omachi rice with a polishing ratio of 7%. It is the world's first ultra-high-polished sake made from Omachi rice (according to our research as of October 2020). Junmai Daiginjo MIYASHITA ESTATE is a different dimension of sake born from the ultimate sake brewing process, and comes in two types, "Kaori" and "Aji", which are brewed and fermented with different yeasts. "Kaori" is characterized by a gorgeous and elegant fragrance and a fresh, clear taste, while "Aji" is characterized by a gentle and elegant fragrance and a refreshing taste with a pleasant acidity.
