Story
Kozaemon [Nakajima Brewing]
With a history spanning over 320 years, the brewery began brewing sake during the Genroku era (1702), the most flourishing period of Edo culture. By developing and reclaiming land along the meandering Toki River basin, they created a beautiful rural landscape of rippling rice fields, and the town was named Mizunami, meaning "watery waves," reflecting the beautiful, undulating rice fields. The Higashi-Mino area of Gifu Prefecture, where the brewery is located, is known for its thriving ceramics and forestry industries. The soil remains approximately 20 million years old, and the sake brewing, utilizing the soft water nurtured by this rich natural environment, is enjoyed by people all over the world.
