Story
Rabbit Ballerina [Utsunomiya Brewery]
Usagi no Ballerina (Rabbit Ballerina) is a sake brewed through a collaboration between the Ehime Prefectural Sake Brewers Association, Tokyo University of Agriculture, and the Ehime Prefectural Industrial Technology Research Institute. It is made using Type-3 (Well Balance), one of four types of sake yeast isolated from "Sakurahime" (delphinium), the official flower of Ehime Prefecture. The name comes from the fact that it was developed in 2023, the Year of the Rabbit in the Chinese zodiac, the brewery is located in Unomachi, which means "rabbit," and also from Utsunomiya Sake Brewery's concept of "making sake that can be enjoyed," leading to the idea that enjoyment leads to dancing, and thus to a ballerina.
