Product description
"800 Soba" is the flagship "800" sake, brewed with rice and buckwheat koji. At Abe Shuzo in Kashiwazaki, Niigata, it is brewed using koji made from organic buckwheat berries from Ichikarabatake in Ojiya, Niigata, along with Niigata rice. Buckwheat berries are made into yellow koji and crossed with ginjo rice to bring out a clear sweetness. To bring out the rich flavor of the buckwheat, Abe Shuzo's "Hashira Shochu" brewing method is used, using kasutori shochu from the brewery. The sake has a refined flavor when served at room temperature, and when warmed, it has a soft, thick consistency and flavor similar to soba soup. *Please note that due to logistics reasons, shipment may be delayed. 800 YAO [Linne Co., Ltd.]
"800 YAO" is the first brewery brand of "LINNÉ," founded in Kyoto in 2024 by Imai, the first master brewer of craft sake pioneer "WAKAZE." The name comes from the Japanese word "yahyaku" (eight hundred), which means "a large number of things," as in the eight million gods. Brewed with koji made from a variety of ingredients, not just rice, it unlocks the potential of koji and creates a new concept of sake, "brewing something different."
