Product description
A premium sake crafted from Akita Sake Komachi rice polished down to 25%, and brewed using Dainagawa’s traditional Yamauchi-style cold fermentation. After being aged for several years at low temperatures inside the brewery, this unfiltered Junmai Daiginjo develops a gentle ginjo aroma, a smooth, rounded flavor, and a soft, lingering finish.

Story
Dainagawa (aged sake/vintage sake) [Dainagawa Co., Ltd.]
Founded in 1914, Dainagawa Brewery is located in Omori-cho, Yokote City, at the foot of Mt. Horoha in the northwest of the Yokote Basin, in the village of the ancient Shimotsuki Kagura dance. Yokote, in snowy Akita Prefecture, is a city that receives particularly heavy snowfall. The local culture and traditions, including the famous "kamakura" (snow huts), have been nurtured alongside the snow. "We want to brew sake that not only gets you drunk, but also intoxicates your soul," they say, brewing with heartfelt dedication, in harmony with the local atmosphere and the feel of the brewery. Using the pure water of the Dewa Hills, which is ideal for sake brewing, as their brewing water, they brew their sake using the traditional Akita-style cold brewing method of Master Brewer Yamauchi.
