Product description
A premium sake crafted from Akita Sake Komachi rice polished down to 25%, and brewed using Dainagawa’s traditional Yamauchi-style cold fermentation. After being aged for several years at low temperatures inside the brewery, this unfiltered Junmai Daiginjo develops a gentle ginjo aroma, a smooth, rounded flavor, and a soft, lingering finish.

Story
Oonogawa (aged sake, aged sake) [Oonogawa Co., Ltd.]
Founded in 1914, Onogawa is located in Omoricho, Yokote City, at the foot of Mount Horoha, northwest of the Yokote Basin, and home to the ancient Shimotsuki Kagura dance. Akita is known as the snow country, and Yokote is a town that receives particularly heavy snowfall. The climate and culture of the people who live here, including the famous "kamakura" snow huts, have been nurtured by the snow. "We want to brew sake that not only gets you drunk but also intoxicates your soul," says the owner, who brews with care, in harmony with the local atmosphere and brewery ambiance. Using pure water from the Dewa Hills, which is ideal for sake brewing, the sake is brewed using Toji Yamauchi's traditional Akita-style cold brewing method.
