Story
Suwa Senpo [Suwa Sake Brewery]"Sake brewing without heaven" is the brewery's standard. The delicious Junmai sake, made from pure soft water nurtured in natural forests and rice from the local Tottori prefecture, is highly regarded as the perfect drink to accompany food. The Junmai Daiginjo "Peng" is the pinnacle of Suwaizumi, and appeared in the manga "Natsuko no Sake" and was even selected as a sake for JAL's first class. It is a masterpiece that can be called a work of art, brewed with meticulous attention to every step of the process, using Yamada Nishiki rice polished to 40%. After pasteurization in the bottle, it is aged in a refrigerator at 5℃ for more than three years, which evolves into a mellow taste with a harmonious balance of acidity, sweetness, and bitterness while retaining the ginjo aroma.
