Product description
This is a Junmai Genshu brewed using the traditional "Yamaoroshi Discontinued Starter" method (Yamahai). The pleasant aroma and acidity are due to unique lactic acid fermentation, making it an individualistic sake that offers different flavors when enjoyed either chilled or warmed.

Story
With Xie Niang [Wine brewing with Xie Niang]Yosa Musume Sake Brewery started its sake brewing here in 1887. Since its founding, they have used pure water that is naturally filtered through granite from a horizontal well that connects to the center of the mountain behind the brewery as their brewing water. The wooden brewery, which has been in operation since the Edo period, maintains optimal temperature and humidity conditions, supporting sake brewing in northern Kyoto, where the climate changes greatly. For generations, sake brewing has been carried out by family members. In order not to miss the breath of the sake being brewed, the brewery and residences are connected, and they have continued to maintain the same sake brewing style that has remained unchanged since ancient times.
