By assembling (blending) sake from three Kyoto breweries, we have created a two-layered flavor mix of sweet and dry. It is a refreshing drink that is perfect for summer, reminiscent of fireworks.

"Assemblage Club" is a Japanese sake developed and produced by Leaf Publications Co., Ltd. and three sake breweries in Kyoto, using the assemblage technique. Assemblage refers to the traditional technique of blending base wines, and is the mainstream method in France, Italy, and Spain. Bordeaux wines and Champagnes have always been and continue to be representative of the world because of the complex flavors and aromas that can only be created through blending. In Japanese sake, too, it has become clear that there are flavors that can only be achieved through assemblage, such as layering flavors or rounding out the edges. In addition to the fermentation techniques of the toji (master brewer), the technique of assemblage makes it possible to further expand the flavor of Japanese sake.
