Story
Kotsuzumi (small hand drum) [Nishiyama Sake Brewery]
Founded in 1849 as a sake brewery, it has flourished as a brewery that produces excellent sake using the natural resources and techniques of Tanba. Its reputation for a perfect combination of locally produced rice from Hyogo Prefecture, ultra-soft well water from the premises, and the skills of Tanba master brewers has continued to this day. The brewery has had close ties with writers and artists for generations, and has been loved by many cultural figures, including the haiku poet Takahama Kyoshi. Three of the buildings on the premises have been designated as registered tangible cultural properties. With "Kotsuzumi," a sake named by Takahama Kyoshi, as its flagship product, the brewery continues its year-round brewing process, upholding tradition while creating new products, based on the policy of "delicious products made with high-quality ingredients and the simplest possible ingredients." It has garnered high praise both domestically and internationally, winning numerous awards in various competitions, and spreading sake culture along with new values.
