Story
Kasen [Kasen Sake Brewery]The brewery was founded in 1730 (Kyoho 15) during the mid-Edo period. It was during the time of the 8th Tokugawa Shogun, Yoshimune. The founder of the brewery, Tawaraya Choshichi, who had been a rice wholesaler in Tsuwano for a long time, started the sake brewing business. The current owner is the 10th generation, and the 11th generation is currently working as the chief brewer. Since the founding, the brewery has been working hard to make sake that is loved by local people. It continues to pursue the original taste of Japanese sake, with a dry yet mellow taste. It also continues to be particular about the ingredients. It uses the best sake rice, Yamada Nishiki and Sakanishiki from Tsuwano. The brewing water is underground water from the beautiful Aonoyama mountain. We would like to continue to make Tsuwano's local sake, Kasen, from the past to the present and into the future using traditional methods by people using their own hands.
