Story
Kasen [Kasen Sake Brewery]
Founded in 1730 (Kyoho 15) during the mid-Edo period, in the time of Tokugawa Yoshimune, the 8th shogun, the first generation owner of this brewery, Tawaraya Choshichi, who had long been a rice wholesaler in Tsuwano, started the sake brewing business. The current owner is the 10th generation, and the 11th generation is currently working as the master brewer. Since its founding, the brewery has consistently strived to brew sake that is loved by the local people. It continues to pursue the authentic taste of Japanese sake, which is dry yet rich in flavor. The brewery also maintains a commitment to high-quality ingredients, using the finest sake rice such as Yamada Nishiki and Tsuwano-grown Saka Nishiki. The brewing water comes from the underground springs of the majestic Aonoyama mountain. Using traditional methods that rely on human hands, the brewery aims to continue producing Tsuwano's local sake, Hanasen, from the past to the present and into the future.
